Elk Empanadarogie

WHEN AVAILABLE. After the gnocchi, this is the hardest dish we make in the kitchen. It started simple: Make a pierogi. Stuff it with elk and Idaho potato mash. Add cheese. Make a delicious sauce. And sell. But no. The dough never worked. It was always tough. The owner's Polish ancestors were surely rolling over in their graves. The stuffing, however, was phenomenal—100% elk meat, creamy mashed potatoes, and a special cheese blend. That’s when the owners remembered a small empanada maker they met in the world’s tiniest town in Patagonia, Argentina, on a fishing trip many years ago. They reached out. The result? An authentic Argentinian empanada dough paired with our pierogi-style filling. The Empanadarogi. Only found in Swan Valley, ID.

Bison Short Ribs

Did you know that bison in America needs to be raised on grass, without vaccines and GMO products. This leads to a naturally low fat content. So there are a very few mouth watering, melt in your mouth, take your breath away cuts in a Bison. The short rib, is the star of the Bison. Braised by our expert Texas Braising chef, this bison is slow cooked for 6 hours, and served with a wonderful sauce made from the drippings. Choice of Potato and Veg.

Duck Shepards Pie

Is wasn’t long ago that duck was a staple in the diets of the American living in the western states. The French did one thing right when it came to cooking. Pairing duck with fresh fruit, red wine, and sweet potatoes. We use a cherry cranberry mix, merlot wine, slow cooked duck we pull by hand, and simmer for 4 hours. Then its as simple as plating the duck greatness with our delicate golden potatoes and sweet potato mash. Allow for 15-20 min cook time.

Elk Ravioli 28 One ranch in South Dakota raises elk and then turns them into wonderful elk stuffed ravioli. Our top seller for obvious reasons. 7 oz of real elk meat, not cut with any beef. When you live next to the greatest fly fishing river in the country, you need a trout dish. And like the Snake River’s summer hatches, this better live up to the same standard. Pan-seared local Idaho rainbow trout fillet, cooked to perfection and finished with a velvety lemon beurre blanc. Served over a bed of homemade mashed potatoes and paired with vegetables.

Chef's Choice Gnocchi

Have you seen homemade Gnocchi on a menu in a while? Of course not. Because it sucks to make by hand, labor right now isn’t cheap. But this is Idaho, and our chefs and owners know we have to make an entree featuring idahos number one crop. The great Potato. Russet potatoes from a 4th generation Idaho farm within an hour pairs with some flour. After the chefs roll it all day, boil it, prep it, and portion it. We leave it up to them with what to pair it with this evening. Ask your server for tonights flavor, or send in a request, the men and woman in the back love to show off.
